Why Meatless Mondays …
I have to admit I will never be a strict vegetarian. I do love all things meat. That said, to live a healthier life-style, I have been eating vegetarian one or two days a week for awhile now. I love how I feel on those days. Clear-headed, lighter, more energetic – just plain healthier! Plus I know that it is a better way to eat. As good as bacon tastes, it’s not the best thing for my body!
This Fall, my husband and I have challenged ourselves to be vegetarian for a month. We did it to change how we eat to both be healthier and, hopefully, loose a few pounds. We are now in our 40s so it’s time to pay attention to what we put in our bodies.To keep myself honest, I blogged about it every day … posting my menu, my thoughts, and a recipe daily. The challenge was surprisingly easy and I was delighted to discover how many delicious vegetarian recipes are out there. All the dishes we tried both my husband and I loved. And …. my kids found themselves going meatless without complaints many days. It was a good thing for my whole family.
Now that the 30-days is up, I want to continue eating vegetarian at least one day a week. I hope these Meatless Monday recipes will inspire you to eat more veggies and whole grains!
