I used almost your same menu last night when I catered the Grace-St. Luke’s Church vestry dinner. They went WILD. They loved the chicken enchiladas, the margarita salad and blueberry crumble. I added a side of saffron rice and black beans. The plates came back with not even a lettuce leaf on them! Thank you for a great cookbook, loved meeting you and I am so looking forward to trying more of your super ideas.
