		<description><![CDATA[Creole cooking consists largely of African dishes infused with Native American and French (and sometimes Spanish) techniques.  

Shrimp Creole, Gumbo, Dumplings...they&#039;re all Creole foods based on African dishes and nearly identical equivalents can be found throughout West and Central Africa. This is one of the reasons there is SO MUCH overlap in the foods that African-Americans eat throughout the US and especially the South. 

Even our beloved Crawfish Etouffée is based on an African dish made with shrimp and minus the roux.]]></description>
